Description
Different cultures admire amaranth for its incredible nutritional profile. It has a mild, nutty, “malt-like” flavour and is naturally gluten-free. 1 cup of amaranth should be simmered in 2 1/2 cups of water for 18 to 25 minutes or until it is soft. Add fresh herbs or ginger root, or use equal parts water and stock or apple juice to enhance the flavour. Increase the liquid to 3 cups and add honey or brown rice syrup for a great breakfast cereal.
